A stunning hand forged sanmai nakiri style chef knife . The core is 1084 carbon steel and damascus made from mild steel and 15n20 steel as a cladding. There are also a layer of copper between the core and cladding layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.

Nakiri knives are a Japanese style of knife used to prepare vegetables, the blade has an S -Grind to help with food release. Being such a thin blade its designed for up and down cutting of softer materials so please NO sideways pressure such as may occur when breaking open a pumpkin.

The octagonal handle is made from sheoak timber with stainless steel and G10 spacers

Blade length is 140 mm (5 1/2 inches) and its 51mm deep at the heel. overall length is 305 mm . the spine is 2.5 mm wide near the handle with a distal taper to 1.7mm near the ‘tip’ . Weight is about 168 gm nice balance
