A stunning hand forged sanmai/ cumai nakiri style chef knife . The core is 26 layer damascus steel made from 15n20 and 1084 carbon steel and 15n20 steel as a cladding. There are also a layer of copper between the core and cladding layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility. Cumai is a name given to sanmai thats made using copper.

Nakiri knives are a Japanese style of knife used to prepare vegetables, the blade has an S -Grind to help with food release. Being such a thin blade its designed for up and down cutting of softer materials so please NO sideways pressure such as may occur when breaking open a pumpkin.

The handle is made from stabilised hooked needle wood with copper and G10 spacers

Blade length is 125 mm (5 inches) and its 46mm deep at the heel. overall length is 280mm . the spine is 2.6 mm wide near the handle with a distal taper to 1.3mm near the ‘tip’ . Weight is about 150 gm nice balance
