A stunning hand forged san mai chef knife . The core is 1085 carbon steel and 416 stainless steel as a cladding. There are also a layer of nickel between the steel layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.

The handle is made from gidgee timber with stainless steel and Gl0 spacers

Blade length is 147 mm (5 3/4 inches) and its 38 mm deep at the heel. overall length is 285 mm . the spine is 2 mm wide near the handle with a distal taper to less than 1mm near the tip . Weight is about 116 gm nice balance
