A stunning hand forged san mai chef knife . The core is apexultra carbon steel and 100 layer damascus steel (1075/15n20) as a cladding. There is also a thin layer of nickel between the layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.

Apexultra is a new alloy of steel developed specifically for knife making, it is very hard around 65 rockwell while also being tough ( not brittle)

The handle is made from stabilised Tamarind timber with stainless steel and G10 spacers

Blade length is 250mm ( 10 inches) and its 50mm deep at the heel. overall length is 435mm . the spine is 3 m wide at the heel with a distal taper to 1mm near the tip . Weight is about 295 gm nice balance
