Red Gum "Takefu' Sanmai 20.5 cm Chef Knife
Red Gum "Takefu' Sanmai 20.5 cm Chef Knife
This Knife is something special !
About 2 years ago I bought a billet of steel made by the Takefu company in Japan. I have finally made 2 chef knives from it and a small paring knife is in the works. I normally make my own laminated/ damascus steel but this steel is something that can only be made in a factory setting.
The billet of steel has a high carbon steel core of V toku 2 steel. hardened to about 62 rockwell. the cladding is layers of stainless steel, copper and brass.
The knife also has a bolster of mokume gane that I have made - think damascus steel but made from brass/copper and nickel
The hidden tang handle is beautiful red gum burl and has a small mosaic pin.
Blade length is 205 mm (8 inches) and its 51mm deep at the heel. Overall length is 360 mm . Spine width is 2.8 mm at the heel with a distal taper to less than 1mm near the tip . Handle is 140 mm long 23mm wide and 28 mm tall . weight is 230 gm ,nice balance
Please read the care instruction page before purchase, this is a carbon steel knife not stainless steel and needs a little extra love and care
All knives come with complementary tin of DBK Knife Wax , a blend of and food grade paraffin oil and pure bees wax , to help keep the handle and steel in good condition.
