A stunning hand forged san mai nakiri style chef knife . The core is 52100 (ball bearing steel) carbon steel with 20 layers of “damascus” steel as a cladding. There is also a thin layer of copper between the core and the cladding layers . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility. Cumai is a name given to sanmai using copper
The hidden tang handle is made from gidgee timber with brass and G10 spacers
Nakiri are a Japanese Style if knife designed for vegetable preparation. This blade has a concave S -Grind to help with food release. Being such a thin blade its designed for up and down cutting of softer materials so please go easy with sideways pressure such as may occur when breaking open a pumpkin.
Blade length is 155 mm ( 6 inches) and its 49 mm deep at the heel. overall length is 310 mm . The handle is 145mm long, a narrow 21mm wide, 25mm deep, The spine is 3.1 mm wide near the handle and averaging about 2.2mm for most of the spine weight is 190 gm nice balance
