A stunning hand forged san mai chef knife . The core is 20 layers of damascus (1084/15n20) carbon steel then a layer of copper, then mild steel as a cladding. . San mai is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility. Cumai is a name given to sanmai knives using copper
The handle is made from gidgee with copper and G10 spacers.
Blade length is 225 mm (8 3/4 inches) and its 50 mm deep at the heel. overall length is 390 mm . the spine is 3.7 mm wide near the handle with a distal taper to less than 1mm near the tip . Weight is about 230 gm nice balance
