A stunning hand forged san mai chef knife . The core is 20 layers of 1084 and 15n20 carbon steel and layer of wrought iron from an old wagon wheel has been used as a cladding. There is also a thin layer of nickel between the layers . San mai means “3 layers” in Japanese and is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.

The full tang handle is made from gidgee timber with stainless steel pins.

Blade length is 200 mm (7 ¾ inches) and its 48 mm deep at the heel. Overall length is 330 mm . Spine width is 3.1 m at the heel with a distal taper to less than 1mm near the tip . Handle is 140 mm long 22mm wide and 24 mm tall . Nicely ballanced and 196 gm
