A beautiful pair of sanmai chef knives to tackle all of the jobs in the kitchen.

Hand forged sanmai steel consisting of a high carbon damascus steel core, then a layer of nickeland then wrought iron from an old wagon wheel as a cladding Full tang gidgee timber handles, with stainless steel pins

San mai means “3 layers” in Japanese and is a Japanese sword making technique that allows for a hard steel core that stays sharp and the softer jacket either side allowing for some flexibility.

This set consists of ;

Chef knife - blade length; 195mm (7 ¾ inches) overall length, 325mm , width of blade at heel; 50mm thickness of spine at handle; 3.4 mm tapering to less than 1mm .Handle length 135 mm width 22mm depth 24mm . weight; 193 gm Balance; good

Paring Knife - blade length; 110mm overall length, 225mm width of blade at heel; 30mm thickness of spine at handle; 2.6mm tapering to less than 1mm
